National Food Showdown Flaunts Batangueno Cuisine, Pushes for Local Delicacy Innovations

University of Batangas- Lipa Campus hosted the 15th National Food Showdown (NFS) with a theme entitled “Kusina Filipina: Keep the Momentum… Full Speed Ahead!”

The two-day event featured a vast selection of Batangueno cuisine among many other local cooking,— from the internationally acclaimed Kapeng Barako to the Batangueno merienda staple sumang haba.

UB College of Management and Tourism Dean Dr. Irene De Villa hinted that UB was initially overwhelmed in hosting such a momentous event featuring celebrated national and international chefs as jurors and lecturers to various culinary competitions and discussions.

“This is the National Food Showdown, the grandest culinary event …but we took on the challenge and we have proven na kaya natin,” De Villa furthered, implying that NFS is also an opportunity to celebrate and further the reach of Batangueno cuisine.

National Food Showdown Chairman Chef Myrna Segismundo, in an interview with WowBatangas.com, noted that NFS reintroduces the rich heritage of regional cuisines to the younger generation who may now be more keen to experience western and other international dishes— leaving local dishes out of the limelight.

NFS is an annual national hospitality and culinary event held in provinces throughout the Philippines including Cagayan De Oro, Bacolod, Cebu, Baguio and now, Batangas.

In its early years, NFS aimed to be a venue to showcase the kitchen and service prowess of culinary students and professionals who mostly leaned on cooking international dishes due to its complicated culinary techniques and structured principles of cookery.

Now on its 15th installment, NFS decided to shift its focus to regional cooking as it aims to display the application of international principles of cooking to homegrown recipes, ultimately coming up with modern renditions of traditional dishes.

“Ang mahalaga wag natin malimutan ang kultura at tradisyon ng mga ninuno natin… baka hindi na ito makilala pa ng mga kabataan,” Segismundo furthered.
