Great things come in small packages. Just like the Sardinella Tawilis (or Freshwater Tawilis) a small fish which can measure up to 15 cm and weighs about 30 g and can only be found here in Batangas particularly in Taal Lake.
A kilo of tawilis normally costs around P100-P150, depending on the season. Most restaurants here in Batangas include any tawilis dish in the menu and has always been among their best-sellers.
One of the most popular ways to cook tawilis? Have it crispy fried.
Ingredients
1 kg tawilis
1 cup all-purpose flour
1 cup cornstarch
1 cup water
salt
pepper
oil for deep frying
For the dip:
vinegar
chopped onions
chopped garlic
red chili pepper (optional)
Procedure
1. Combine water, flour, and cornstarch. Mix well. Set aside batter.
2. Season tawilis with salt and pepper then dredge into the batter.
3. Deep fry until golden brown and crispy. Place fried tawilis on a platter covered with tissue paper to absorb excess oil.
Best served with the suggested dip and eat it from head to tail.
